For one night only, the founder of the famed international chain of Japanese Peruvian fusion restaurants which bears his name hosted members of the media and specially invited guests. They had the rare opportunity to speak to him exclusively on his culinary crusade and his journey in helming one of the most recognisable fine-dining brands in the world.
